tastiest hushpuppies ever!

When I decided to fry up some catfish for dinner the other night, hubby suggested cornbread to go with it, but I was thinking hushpuppies! I’ve never made any before, but we did have a box of jiffy cornbread mix so I thought, how hard can it be to take that and turn it into hushpuppies?

So here is my little recipe that I whipped up, and that turned out to be THE BEST TASTING HUSHPUPPIES that I’ve ever had!

  • 1 pkg jiffy cornbread mix
  • 8 oz. can of corn
  • 1 egg
  • 3 chopped green onions
  • 1/2 cup shredded cheddar cheese
  • few big pinches of salt
  • few big pinches of garlic powder
  • 2-3 tbsp of flour

 

Just grab a big bowl and mix all that together.  The batter should be slightly thick and sticky, it needs to be able to hold together in the fryer.

Heat up your oil and start dropping rounded spoonfuls in.  Fry them up for a few minutes until they’re a dark golden brown and enjoy!

They were sweet, cheesy, spiced right and very addicting.  I think I only ate a piece or two of the catfish and let the hushpuppies be my real dinner.

Try different add ins like bacon, shredded zucchini, honey, etc…Customize away!

  1. Funny – tonight I fried some catfish (we went fishing) and I was going to look up a recipe for hushpuppies, but just didn’t feel like making them on top of already frying the catfish. I gotta say that when I was a kid in (in the Houston area) when my grandma used to fry fish she always made hushpuppies, and this recipe looks pretty good. I am going to have to try it!

  2. Unless the corn was creamed (and from the can in the pic it looks like whole) I don’t see how one egg could moisten all those ingredients. Maybe there should be a little milk in there somewhere?

    • Thank you for bringing this to my attention, Julie. I put together this recipe a few years ago so I don’t remember exactly but I believe I used all the juice from the corn, didn’t drain the can. The batter should be on the thicker side. I’ll have to try this recipe again and see. Let me know how they turn out for you if you try them!
